Fiber Rich Muffins Recipe

One of these muffins goes well with a glass of fruit juice. They are terrific as an on-the-go breakfast. As an additional benefit the cereal has milled flaxseed and soy.

Recipe Ingredients for Fiber Rich Muffins

1 cup Hodgson Mill Multi Grain Hot Cereal
1 cup flour
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/3 cup sugar
1 cup carrots, shredded
1 cup apples, peeled and chopped
1/3 cup apple sauce
1/2 cup skim milk
2 eggs (or 4 egg whites)
2 tbsp. canola oil
1 tsp. vanilla

Recipe Directions for Fiber Rich Muffins

  1. Preheat Oven to 400 degrees F. Line 12 muffin cups with paper liners or grease muffin cups.

  2. Blend together dry ingredients. In a separate bowl, blend remaining ingredients then add to dry ingredients. Mix with a spoon until blended. Batter will be thick; spoon into muffin cups.

  3. Bake 20-22 minutes or until golden brown.
