Original recipe called for apples, pecans, whole milk, and sugar (I substituted blueberries, walnuts, skim milk and Splenda). Lowered the calories from 209 per muffin to 179 per muffin.

Recipe Ingredients for Fiber Rich Muffins, Hodgson Mill Adapted Recipe

1 cup Hodgson Mill Multi Grain Hot Cereal
1 cup Hodgson Mill Wheat Flour
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup Splenda
1 cup carrots, shredded
1 cup blueberries
1/2 cup skim milk
2 eggs
1/4 cup Smart Balance Vegetable Oil
1 tsp. vanilla flavoring, no alcohol
1/2 cup walnuts, chopped

Recipe Directions for Fiber Rich Muffins, Hodgson Mill Adapted Recipe

  1. Preheat oven to 400 degrees.

  2. Line 12 muffin cups with paper liners or grease muffin cups.

  3. Blend together dry ingredients.

  4. Add remaining ingredients and mix until blended.

  5. Batter will be think; spoon into muffin cups.

  6. Bake 20-22 minutes or until golden brown.
