Great source of fiber!! Eat these for breakfast or a snack at mid day. The batter will stay good in your fridge for a few weeks so you can have hot muffins anytime you like. Modified from recipe found on www.food.com

Recipe Ingredients for Fiber One Muffins

3 cup Original fiber one cereal
8 oz No Calorie Sweetener
3/4 cup Applesauce
4 oz Egg Substitute
2 1/2 cup Whole Wheat Flour
2 1/2 tsp Baking Soda
1/2 tsp Salt, Table
2 cup Milk, Nonfat, Fluid

Recipe Directions for Fiber One Muffins

  1. Preheat oven to 400.

  2. Boil 1 cup of water and pour over the fiber one cereal. Let stand to get soft.

  3. Mix together remaining ingredients then add in the cereal.

  4. Spray your muffin pan with non-stick spray (these will definately stick if you don't!).

  5. Bake for 15-20 minutes until done.

  6. Note: You can experiment and add things you like. A favorite of mine is cinnamon!
