Delicious and healthy muffins made from Fiber One cereal.

Recipe Ingredients for Fiber One Muffins

4 cups Fiber One Cereal
1 cup sugar
2 1/2 cups flour
2 eggs
2 tbsp baking powder
1/2 cup olive oil
2 cup 1% milk
1/2 cup raisins
1/4 cup chopped almonds

Recipe Directions for Fiber One Muffins

  1. Preheat oven to 400 degrees F.

  2. Pulverize 4 cups of Fiber One cereal in a blender or food processor until only about half of the cereal is finely ground.

  3. Pour into separate bowl. Stir in milk, eggs, oil, sugar, raisins and almonds. You may let it sit for a few minutes to let the cereal fully absorb the liquid. Take a break to put paper in your muffin tins. :)

  4. Stir in the flour and baking soda. Be careful not to over-mix this part because doing so will cause the muffins to turn out flat. But you still want to make sure all your flour is sufficiently incorporated into batter.

  5. Pour about a 3rd of a cup of the batter into each muffin tin. You should have 2 dozen muffins.

  6. Stick them in the oven and turn the heat down to 375 F. Bake for 30-40 mins.

  7. Enjoy~!
