Recipe Ingredients for Fiber One Chocolate Chip Muffins

1 cup flour, all purpose
2 cups fiber one cereal
1/4 cup egg beaters
1/2 cup apple sauce, unsweetened
1 1/4 cup milk, 1%
3/8 cup chocolate chips
1 tsp baking soda
1/2 tsp baking powder

Recipe Directions for Fiber One Chocolate Chip Muffins

  1. Preheat oven to 400 degrees.

  2. Grind F1 cereal, add milk. Let sit 5 minutes.

  3. Add to F1 the apple sauce and egg beaters and mix well.

  4. Add F1 mixture to flour mixture and beat until moistened.

  5. Stir in chocolate chips.

  6. Put 1 tsp dough into 36 mini-muffin tin.

  7. Makes 9 servings, 4 mini muffins each
