Healthy because of the flax seed, oatmeal, chia seeds, and prunes - delicious because of the peanut butter, honey, and lots of cinnamon! Provides over 7 grams of fiber per serving and 30 grams of carbs.

Recipe Ingredients for Fiber Muffins

120 1 1/2 cups almond flour
2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
30 about 1/4 cup milled flax seed
35 about 1/4 cup chia seeds
56 grams instant oatmeal
100 grams cinnamon raisin swirl peanut butter
4 eggs
1/2 cup unsweetened applesauce
20 grams xylitol
1/2 cup 1% buttermilk
90 about 12 prunes prunes
10 topping honey
1 tbsp cinnamon (topping)
15 topping coconut oil

Recipe Directions for Fiber Muffins

  1. Preheat oven to 350 degrees F.

  2. Combine all dry ingredients in a small mixing bowl: almond flour, baking powder, spices, flax, chia seeds, oatmeal, and salt.

  3. Gently melt peanut butter in a glass mixing bowl in the microwave, for example 1 minute at half power.

  4. Combine peanut butter with wet ingredients - eggs, applesauce, xylitol, and buttermilk. Make sure eggs are thoroughly beaten.

  5. Gradually stir dry ingredients into wet ingredients.

  6. Snip prunes into batter with a scissors, then stir in.

  7. Ladle batter into muffin pan. Fill to the top for puffy muffins.

  8. In a small bowl, combine honey, cinnamon, and coconut oil. Spoon cinnamon topping over each muffin top, and swirl in gently.

  9. Bake muffins for 25 minutes, or until a knife inserted in center muffin comes out clean.

  10. Cool for 1 minute, slide knife gently around edge of pan, then turn out muffins, and continue with cooling.

  11. Goes well with a bonus spoonful of cinnamon raisin swirl peanut butter!
