A great way to save money and calories and add fiber to your muffins.

Recipe Ingredients for Fiber muffins

1 cup all bran cereal
1 cup fat free sour cream
1 cup mashed bananas
1 egg
2 tablespoons canola oil
2 tablespoons unsweetened apple sauce
1/2 cup prune baby food
1/2 cup sugar
1 cup all purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/2 cup semi sweet chocolate chips
2 tablespoons wheat germ

Recipe Directions for Fiber muffins

  1. Preheat oven to 375 F

  2. Combine cereal and sour cream and let stand for 3 minutes

  3. Add mashed bananas, eggs, oil and apple sauce to bran mixture and blend well

  4. Add other ingredients and stir until blended

  5. Spoon into muffin tine (sprayed or lined with paper cups)

  6. Bake for 20-25 minutes
