Recipe Ingredients for Fiber-licious Balsamic Eggplant

1 medium Eggplant
1 tbsp Balsamic Vinegar
1 Salt
1 Pepper
1 Cooking Spray

Recipe Directions for Fiber-licious Balsamic Eggplant

  1. Chop eggplant into thin, chip-like circles.

  2. Coat pan with cooking spray.

  3. Fry eggplant covered on medium high heat until brown on one side.

  4. Flip eggplants and brush browned side of the eggplant slices with balsamic vinegar.

  5. Allow eggplant to cook for another 2-3 minutes.

  6. Remove from heat, season with salt and pepper to taste.
