Adapted from: http://www.43things.com/things/view/1680979/develop-a-recipe-to-replicate-zen-bakerys-fiber-cakes Replaced 0.75 flour with ground up 7 grain cereal. Grind in coffee grinder. can add 1/2 tsp salt Can put raisins, cranberries, chocolate chips, or nut on top--just 2-3 on each muffin

Recipe Ingredients for Fiber cakes

3/4 c Bob's Red Mill 7 grain hot cereal
2 c wheat bran
1 c apple sauce
1/2 cup water
1 tsp baking soda
1 1/2 t cinnamon
1/2 t salt
1 cup apples, chopped
2 servings agave
1 T olive oil
1 T lemon juice
1 1/2 oz almonds

Recipe Directions for Fiber cakes

  1. Grind cereal in coffee mill. Can also grind wheat bran in mill for a softer batter.

  2. Mix dry ingredients. Mix wet and add to dry. Start with half cup of water, but can gradually add a little more if batter seems too dry.

  3. Finely dice apples and add them last.

  4. Can put raisins, cranberries, chocolate chips, or nut on top--just 2-3 on each muffin.

  5. Divide between 16 lined cupcake tins, bake at 375 for 15-20 minutes. Watch carefully. Lower temp if your oven runs too hot.

  6. Store in the fridge after muffins cool.
