3 bean brown rice salsa w corn Can be thrown together with uncooked rice in a crock pot for a ready to eat meal when you get home from work.

Recipe Ingredients for Fiber anyone?

1 3/4 cups kidney beans (1 can with liquid)
1 3/4 cups red beans (1 can with liquid)
1 3/4 cups great northern beans (1 can with liquid)
16 oz. corn (frozen)
16 oz. salsa (make as spicy as you want)
6 cups brown rice (1.5 cups uncooked brown rice (for crock pot))
3 cups water (for crock pot only)

Recipe Directions for Fiber anyone?

  1. combine uncooked rice and all ingredients in a crock pot cook on high all day

  2. or cooked rice, beans, corn, salsa (no extra water) in a pot and heat through.
