Recipe Ingredients for Fetuccine Alfredo_ Raw

2 cups zucchini, and/or squash
1/2 cup red or yellow bell pepper, sliced into long,thin pasta-like strips
1 1/2 cup Onion, Marinated Ringlets (see recipe)
1/4 cup fresh tarragon, de-stemmed and chopped
2 cups Mushrooms, Portobello, Marinated (for recipe see below)
1 teaspoon jalapeno, minced
1 teaspoon garlic, minced
2 teaspoons ginger, minced
1 tablespoon lemon juice, fresh-squeezed 1 tablespoon white wine
1/2 cup shallots, minced

Recipe Directions for Fetuccine Alfredo_ Raw

With a vegetable peeler, shave zucchini and/or squash lengthwise into long, thin strips; when you've shaved all sides down to the soft and seedy center, slice the remaining portion into long strips. In a serving bowl combine zucchini and/or squash, bell pepper, Marinated Onion Ringlets, tarragon, Marinated Portobello, jalapeno, garlic, ginger, lemon juice, white wine, and shallots. Mix and set aside. Pour freshly prepared Mac Cream over the vegetable pasta and serve immediately.
