one of my science experiments - trying to recreate a recipe from a yummy dish I had at a restaurant in Sackets Harbor, NY

Recipe Ingredients for Fettucini with zucchini sauce

2 zucchini
3 cloves garlic
2 tbsp olive oil
1 tsp crushed red pepper
1/2 cup fat free ricotta
1/2 cup part skim ricotta
1 pound pasta

Recipe Directions for Fettucini with zucchini sauce

Wash the zucchini well and cut off the ends. Grate in a food processor. Cut up the garlic and saute in the olive oil. Add the zucchini and saute. Add a small amount of crushed red pepper. Mix the 2 types of ricotta and stir into zucchini mixture and cook until done. In the meantime, cook the pasta and drain. Serve with the zucchini sauce and some delicious garlic bread.
