Fettucini with smoked turkey and almond cream

Recipe Ingredients for Fettucini with almond cream & smoked turkey

12 oz Organic Spinach Fettucini

Recipe Directions for Fettucini with almond cream & smoked turkey

  1. Grate 2 cloves garlic into large pot of water

  2. Add spinach fettucini and cook until al dente (about 10 minutes)

  3. Chop fine 1 red pepper

  4. Add with 1 cup frozen peas to pasta water 2 min. before pasta is cooked

  5. Process until very fine 1/2 cup toasted almonds, and process with 1/4 to 1/2 cup water to make cream

  6. Add to slightly beaten eggs and 1/2 c. parmesan

  7. Add salt and pepper

  8. Drain pasta and vegetables, reserving 1 c. water.

  9. Add egg/almond mixture to hot pasta/veggies (hot pasta is supposed to cook the egg).

  10. Add 1 1/2 cup grated mozzarella and 1/2 lb. finely chopped smoked turkey

  11. Mix everything together. Although the recipe doesn't say to, I put the mixture in a casserole and baked it for about 20 minutes (to be sure the egg was cooked).
