Recipe Ingredients for Fettucini Alfredo (light) for One

3 oz Organic Whole Wheat Penne
1/4 cup light ricotta cheese
1 1/2 oz skim milk
1 pinch pepper
3 tbsp parmesan cheese

Recipe Directions for Fettucini Alfredo (light) for One

  1. Prepare the pasta according to package directions. Drain, return to the pot, and cover to keep warm.

  2. Meanwhile, in a blender or food processor, combine the ricotta, milk, and pepper. Process until smooth. Place in a saucepan over low heat and cook, stirring constantly, for 5 minutes, or until heated through (do not boil). Pour over the pasta and toss to coat.

  3. Sprinkle with the Parmesan.
