Fettucine with Creamy Roasted Red Pepper and Feta Sauce

Recipe Ingredients for Fettucine with Creamy Roasted Red Pepper and Feta Sauce

2 tablespoons olive oil
1 small onion, chopped
3 cloves garlic, minced
16 ounces roasted red peppers
6 ounces feta, lowfat
1/2 cup vegetable broth
16 ounces
2 tablespoons parsley
2 tablespoons feta, crumbled

Recipe Directions for Fettucine with Creamy Roasted Red Pepper and Feta Sauce

  1. Heat olive oil in large skillet. Saute onion and garlic in oil until soft. Stire in roasted red peppers and heat through. Cool slightly.

  2. Puree red pepper mixture and broth in food processor. Add feta and process until creamy.

  3. Cook pasta and drain, reserving 1/2 cup water. Add pasta to red pepper sauce and toss. Add additional pasta water is sauce is too thick.

  4. Top with feta and parsley.
