Recipe Ingredients for Fettucine Alfredo

1 medium-sized onion, finely chopped
2 garlic cloves, minced
1/4 cup dry white wine or dry sherry
1 tablespoon butter
1 1/2 tablespoons cornstarch
1 3/4 cups milk
3/4 cup grated Parmesan cheese (3 oz)
1/2 cup sour cream
1/4 cup chopped chives (1 Tablespoon dried)
1 teaspoon Worcestershire sauce
1/2 teaspoon Dijon-style mustard
1/8 teaspoon white pepper
1 Salt, to taste
12 ounces fettuccine, cooked

Recipe Directions for Fettucine Alfredo

Gently cook the onion and garlic until soft but not browned. Add wine. Blend cornstarch with a little milk and add to the pan. Blend in the rest of the milk until smooth. Cook until thickened. Add HALF the parmesan cheese and all the remaining ingredients except the fettucine and cook until smooth and heated through. Toss with the hot, drained fettucine and the remaining parmesan. Garnish with more chives and serve with a high fiber vegetable.
