453 3/5 grams Chicken Breasts, skinned boneless
2 cups Smart Balance
32 oz. Fat Free Half & Half
6 oz. Parmesan Cheese, reduced fat
5 cloves garlic
2 small onions
4 oz. Co-Jack Cheese, reduced fat
12 oz. low fat sour cream
1/2 tsp. nutmeg
1/4 tsp. salt
1/2 tsp. black pepper
18 grams fresh basil leaves
6 tsp. fresh parsley
4 tsp. fresh oregano
16 oz. mushrooms
8 oz. white wine
16 oz. whole wheat fettuccine

Recipe Directions for Fettuccinne Alfredo with chicken reduced fat half and half

  1. Cut chicken into cubes. In a large skillet over medium heat combine chicken 4 tablespoons of I Can?t Believe It?s Not Butter, 4 cloves garlic and Italian seasoning**, and cup of white wine. Cook until chicken is no just longer pink inside. Remove from skillet and set aside.

  2. Bring a large pot of lightly salted water to a boil. Add the pasta and cook 8 to 10 minutes (or follow package directions) until al dente. Drain well.

  3. Meanwhile, melt 8 Tbsp. I Can?t Believe It?s Not Butter in the skillet and sauté onion, 4 cloves garlic, and the mushroom until onions are transparent. Slowly add sour cream and half and half stirring until smooth and creamy. Stir in Parmesan and Colby-Monterey Jack cheeses; stir until cheese is melted. Stir in chicken mixture, and sour cream. Serve over cooked fettuccini.
