Pasta with ricotta, pesto and sun dried tomatoes

Recipe Ingredients for Fettuccini Tomato Rustica

8 oz whole wheat pasta
1 tsp. olive oil
1 lb. boneless, skinless chicken breast
3 tablespoons basil pesto
1 teaspoon dried basil
3 cloves garlic, minced
8 oz tomatoes, sun dried
1/2 cup crumbled feta cheese
1/2 cup fat free ricotta cheese

Recipe Directions for Fettuccini Tomato Rustica

  1. Reconstitute your sun dried tomatoes with hot water according to package. When they are ready, cut into small pieces.

  2. Cut chicken into 1 inch pieces. Cook in a pan with 1 tsp. olive oil. While chicken is cooking, heat water to a boil to cook your pasta.

  3. While the chicken and pasta are cooking, When the chicken is done, add pesto, basil, garlic, tomatoes, feta and ricotta to the pan with the chicken. Mix well. Drain your pasta, saving about 1 cup of the cooking water. Add drained pasta to chicken/ricotta mixture and mix, adding in cooking water as needed to make a creamier sauce.
