Recipe Ingredients for fettuccini forfredo

20 oz Cauliflower Florets
15 oz White Kidney Beans Cannellini Drained and Rinsed
1 clove Garlic
2 cup Milk, Reduced Fat, Fluid, 2% Milkfat
0.67 cup Parmesan, Grated Cheese
2 tbsp Olive Oil
2 cup, sliced Squash, Summer, Zucchini, Includes Skin
2 cup Frozen Green Beans
8 oz Fettuccini

Recipe Directions for fettuccini forfredo

  1. place cauliflower, beans, garlic and milk in medium sauce pan, bring to a simmer over medium heat, not a boil, and simmer until cauliflower is tender.

  2. heat olive oil in a saute pan, saute zucchini and green beans until tender.

  3. using a hand blender, or a regular blender, blend the cauliflower mixture until smooth and thick. stir in the parmesan cheese and season with black pepper.

  4. toss vegetables and cooked pasta in the alfredo sauce and serve.
