Fettuccini Alfredo Recipe

Makes 8 servings



Can substitue chicken broth for white wine. Add 2 T butter to sauce, if desired.

Recipe Ingredients for Fettuccini Alfredo

16 oz fettuccine
1 oz dried porcini mushrooms
1/2 cup warm water
1 3/4 cup half and half
1/2 cup chicken broth
2 T olive oil
1 salt
1 pepper
1/8 cup parmesan cheese
2 t finely chopped parsley

Recipe Directions for Fettuccini Alfredo

  1. Soak porcinis in 1/2 cup warm water. Soak for 20 minutes.

  2. Squeeze out water and cut into pieces.

  3. Heat oil in frying pan over moderate heat.

  4. Add the porcini mushrooms and saute them until they're fully coated in oil.

  5. Add chicken broth and bring to a boil.

  6. Add the water you soaked the porcini mushrooms in, avoiding the sediment.

  7. Reduce to low heat and add half and half, stirring until it thickens.

  8. Simmer for 3 minutes, taking care not to let it boil.

  9. Bring some water to a boil. Cook fettuccine.

  10. Drain.

  11. Warm the sauce over moderate heat.

  12. Add the fettuccini and 2 T of butter and stir them in the sauce.

  13. Season with salt and pepper.

  14. Transfer to serving dishes.

  15. Grate Parmesan over pasta.

  16. Garnish with finely chopped parsley.
