Recipe Ingredients for Fettuccine with Walnuts and Parsley

12 oz whole wheat fettuccine
2/3 cup walnuts, chopped
1/4 cup olive oil
2 tbsp garlic, minced
1/2 cup low sodium chicken broth
1/2 cup parsley, chopped
1/2 tsp salt
1/2 tsp pepper
3/4 cup parmesan cheese, grated

Recipe Directions for Fettuccine with Walnuts and Parsley

  1. Cook pasta according to package directions, drain and set aside.

  2. Toast walnuts in a small dry skillet over medium heat, stirring frequently, for 3-5 minutes.

  3. In the same pot the pasta was cooked in, heat the oil with the garlic over low heat, stirring until the garlic is soft, 3-4 minutes.

  4. Return the pasta to the pot, add the broth, walnuts, all but 2 tbsp, parsley, salt and pepper. Toss to combine and continue cooking over low heat for 1-2 minutes.

  5. Remove from heat, add parmesan cheese and toss to combine, divide among 4 bowls and top with the remaining 2 tbsp of walnuts.
