Fettuccine with Veggies Recipe

fresh and healthy - the analyzer would only recognize egg noodles. I used dried fettuccini noodles.

Recipe Ingredients for fettuccine with veggies

4 cups egg noodles
1 cup cherry tomatoes, sliced
3 cloves garlic, minced
1/4 cup fresh basil
2 tbsp fresh oregano
1 medium zucchini, sliced and roasted
1 medium sweet red pepper, sliced and roasted
1 tbsp olive oil
1 tbsp butter
1 cup half and half
1/2 cup grated parmesan cheese

Recipe Directions for fettuccine with veggies

  1. toss chunks of red pepped and halved, sliced zucchini with about 1 tbsp olive oil. Place on foil lined cookie sheet and place under broiler for about 5 minutes. Flip with spatula. cook for ab=nother 5 minutes. Remove from oven.

  2. Boil water for pasta. While waiting for it to cook, slice tomatoes in half, chop basil and oregano, peel garlic and mince if you don't have a garlic press. Heat cream slowly in small sauce pan. Add butter. When melted, stir in parmesan with a whisk. Bring to slow bubbling state. Turn heat to low and let it sit.

  3. Drain pasta when it is al dente. Rinse pasta pot or large non-stick skillet. heat 1 Tbsl olive oil. Saute garlic for about 45 seconds, or until fragrant. Add basil and oregano and tomatoes. Stir for about 2 minutes. Add roasted veggies. Toss veggie mixture with pasta. Add cream, toss again. Serve, top with a sprinkle of parmesan and cracked pepper.
