Fettuccine Primavera Recipe

A mild lemon sauce seasoned with thyme lightly coats this medley of tender chicken, pasta, aspargus, red pepper and peas.

Recipe Ingredients for Fettuccine Primavera

8 ounces uncooked whole wheat fettuccine
1 cup sliced sweet red pepper
1 tablespoon canola oil
1/2 pound chicken breasts, cut into 1/2" strips
6 green onions
1/2 pound asparagus, trimmed and cut into 1" pieces
3/4 c chicken broth
1 1/2 tsp lemon juice
1/2 tsp salt
1/2 tsp dried thyme
1/2 tsp grated lemon peel
2/3 c frozen peas, thawed
2 tsp cornstarch
1 tbsp water
2 tbsp reduced fat sour cream
1/4 c shredded parmesan cheese

Recipe Directions for Fettuccine Primavera

  1. Cook pasta according to package directions. Meanwhile in a 12" nonstick skillet, saute red pepper in oil for 3 min. until crips-tender. Stir in the chicken, onions, asparagus, broth lemon juice, salt, thyme and lemon peel. Cook for 2 min. or until asparagus is crisp-tender. Stir in peas; saute for 1 min. or until heated through.

  2. Combine cornstarch and water until smooth; stir into chicken mixture. Bring to a boil; cook and stir for 1-2 min. or until thickened and chicken is no longer pink. Remove from the heat; stir in sour cream.

  3. Pour the chicken mixture into a large bowl. Drain pasta and add to chicken mixture. Sprinkle with Parmesan cheese and toss to coat.
