Recipe Ingredients for Fettuccine with Parsley Pesto and Walnuts

3/4 pound fettuccine
2 cups parsley
1/4 cup walnuts
1/4 cup parmesan
1 garlic clove
1 tablespoon lemon juice
1/4 cup canola oil
5 ounces spinach

Recipe Directions for Fettuccine with Parsley Pesto and Walnuts

  1. Boil pasta until al dente. Drain, reserving 1/2 cup pasta water, return pasta to pot.

  2. Puree parsley, walnuts, parm, garlic, lemon juice and two tablespoons pasta water until a paste forms. Add oil while the machine is on.

  3. In pot add paste as well as 1/4 cup water and spinach. Toss to combine. Thin with extra water as needed.
