Recipe Ingredients for Fettuccine Alfredo with Vegetables


Sauce:
4 cups Cauliflower
15 1/2 oz White Kidney Beans
1 cup Skim Milk
1 tbsp Butter
1 cup Vegetable Broth
2 cloves Garlic
1 1/2 oz of Fresh Parmesan
1 oz Fresh Parsley
1/4 tsp Salt
1/4 tsp Pepper
1/4 tsp Oregano
1/4 tsp Basil

Vegetables:
8 oz Baby Portabello Mushsrooms
1 1/2 cups Summer Squash
1 cup Green Pepper

Pasta:
1 box Fettuccine

Recipe Directions for Fettuccine Alfredo with Vegetables

  1. Cook cauliflower and beans until they are nearly mushy.

  2. Melt butter with garlic and all spices. Add milk and Parmesan.

  3. In a food processor puree cauliflower, beans, butter mixture. Mix in vegetable broth until the desired consistency is achieved.

  4. Cook vegetables and pasta.

  5. Toss sauce, pasta, and vegetables together.

  6. Serve.
