Recipe Ingredients for Feta Veggie Frittata

8 eggs
1/3 c ground flaxseed
1/2 c feta cheese
2 stalks broccoli, chopped
2 c spinach, chopped
1 onion, chopped
2 c mushrooms, sliced
1/8 head cabbage, shredded
1 carrot, shredded

Recipe Directions for Feta Veggie Frittata

  1. Mix eggs, flaxseed, and feta. Set aside.

  2. Pre-heat oven to 375. Heat cast-iron frying pan sprayed with nonstick spray. Saute veggies until crisp-tender. Pour egg mixture over top and place entire pan in oven. Bake until set firmly.
