Feta and Vegetable Couscous Recipe

This Mediterranean dish was made up by a dear friend who I worked with while working in Alaska as a biological science technician. She was a vegan and I later modified the recipe and added feta and chicken. Every time I make it, it reminds me of Jessica and our good times on Brittish Cove Creek with all baetids all the time!

Recipe Ingredients for Feta and Vegetable Couscous

1 (med) zucchini, sliced
1 (med) squash, sliced
1 (large) clove garlic, minced
1/2 cup lemon juice
1 (med red) onion, chopped
1 (yellow) bell pepper, chopped
1/2 cup cilantro, chopped
5 (roma) tomatoes, chopped
2 cups chicken, cooked and diced
2 tbsp cayenne pepper sauce
5 tbsp olive oil
3 cups Cous Cous, cooked
2/3 cup feta cheese

Recipe Directions for Feta and Vegetable Couscous

  1. Use one box of Near East garlic and olive oil wheat couscous. Prepare in a LARGE pot and let it sit covered.

  2. Prepare two chicken breasts by rubbing with olive oil and franks red hot, salt and pepper to taste. Cook either on the George Forman, grill, bake or saute in a pan. Dice and set aside. You can prepare the veggies while the chicken is cooking.

  3. Prepare all the veggies, except the tomatoes, cilantro and lemon and saute in large skillet with 1 tbsp olive oil.

  4. When onion begins to look softer, add lemon juice and cilantro to the skillet. Cook until zucchini and squash are cooked al dente.

  5. Combine all veggies from skillet and chicken to large pot that has couscous in it. Now add the tomatoes, more cilantro, more lemon juice and more franks red hot.

  6. Add the feta cheese and mix it all up.

  7. Serve in a bowl and garnish with cilantro and more feta.

  8. Enjoy!!!!
