Chicken breast stuffed with spinach, feta cheese, mushrooms and onions.

Recipe Ingredients for Feta Stuffed Chicken Breast

24 ounces chicken breast
2 cups spinach
1 onion, chopped
1/2 cup mushrooms
2 eggs
1/2 pound feta cheese
1 teaspoon dill weed
1 pinch nutmeg
1 salt and pepper
1/6 cup breadcrumbs

Recipe Directions for Feta Stuffed Chicken Breast

  1. Blanch spinach, drain, cool, and chop.

  2. Saute chopped onion, and chopped mushrooms.

  3. Add to spinach. Add remaining ingredients, except chicken.

  4. Slice chicken breasts but not all the way through, making a pocket. Divide filling between 6, 4 ounce chicken breasts. Cover with flap of chicken. Bake at 350 for 40 minutes.

  5. Serve with baby potatoes or rice and vegetables
