Recipe Ingredients for feta and roasted vegetable pie

400 g shortcrust pastry, defrosted
2 cups pumpkin, roasted
4 spears asparagus
1 onion, roasted
6 cherry tomatoes
1 garlic clove, crushed
2 tbs olive oil
2 tsp rosemary
125 g feta cheese, cubed
2 tbs grated parmesan
2 basil leaves

Recipe Directions for feta and roasted vegetable pie

  1. Preheat oven to 180C.

  2. Cut pumpkin, onion into pieces and roast. Remove from oven to cool.

  3. Cut cherry tomatoes into halves.

  4. Slice asparagus into one inch pieces.

  5. Lightly grease a large (20+cm) pie plate.

  6. Put pastry into the plate. Line with baking paper and rice. Blind-bake for 10 minutes. Remove the paper and rice. Bake for 5 more minutes.

  7. Mix pumpkin, onion, cherry tomatoes, asparagus with the garlic, oil and rosemary. Put veges in the pie case. Top with fetta and parmesan. Bake for 20 minutes. Remove from oven and top with shredded basil leaves.
