A delicious and healthy vegetable egg bake. Lots of flavor!

Recipe Ingredients for Feta and pepper egg bake

1 red pepper
1 yellow pepper
1/2 cup spinach
1/2 cup white onion
2 tsp. olive oil
11 eggs
1/2 cup skim milk
3 oz. feta cheese
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. Italian seasoning

Recipe Directions for Feta and pepper egg bake

  1. Preheat oven to 350 degrees.

  2. Slice peppers. Dice onions

  3. Heat a medium-large skillet to medium heat. Put in olive oil.

  4. Saute peppers and onions until tender.

  5. Add spinach to skillet and heat until wilted. Remove pan from heat.

  6. Beat eggs, milk, and seasoning together in a bowl.

  7. Add cheese and vegetable mix to egg mixture and stir together. Be as generous as you'd like with the Italian seasoning or add your own!

  8. Grease baking dish. (Large casserole dish or two 9-inch pie dishes)

  9. Pour egg mixture into baking dish.

  10. Cook 20-25 minutes or until eggs are set and edges are slightly browned. Allow to sit and cool 5 minutes before devouring.
