Recipe Ingredients for Feta & Bell Pepper Quinoa Cups

0.75 cup Quinoa
2 large Egg, Whole
2 large Egg, White
1 medium Squash, Summer, Zucchini, Includes Skin
4 oz Fat Free Feta
0.25 cup Parsley
2 medium (4-1/8" long) Onions, Spring Or Scallions
1/4 tsp Sea Salt
1 dash Pepper, Black
0.5 medium Orange Hothouse Bell Pepper

Recipe Directions for Feta & Bell Pepper Quinoa Cups

Add all ingredients in a large bowl and mix (note, shred zucchini). Scoop into greased muffin tin and back at 350 for approx 20 min until edges are golden. Cool for 5 min.
