Green rice for special occasions. This recipe produces approximately 10 cups of rice, which can feed about 20-30 guests at a party. However, I've counted the servings as 80, since I only eat small portions of this. For larger portions, add more servings to your food tracker.

Recipe Ingredients for Festive Green Rice

4 green bell peppers, roughly chopped
4 jalepeno peppers, roughly chopped
25 green onions, roughly chopped
3 cups cilantro, roughly chopped
6 cups white rice
2 tablespoons olive oil
4 cups water

Recipe Directions for Festive Green Rice

  1. Mix peppers, cilantro and onions in blender.

  2. Add water and continue blending until the mixture is soupy.

  3. Sautee rice in olive oil.

  4. Add rice, water, and mixture to 10 cup rice cooker. Add add water if necessary to reach the 10 cup fill line. Do not fill past the top fill line (this will cause the rice cooker to overflow).

  5. Start rice cooker.
