Recipe Ingredients for Festive Cauliflower Casserole

2 pounds cauliflower, cut into florets
1/4 cup bell pepper, diced
4 1/2 ounces mushrooms
1/4 cup butter, cubed
1/3 cup flour
3/4 teaspoon salt
2 cups milk
2 ounces pimiento, diced
4 ounces swiss cheese, shredded

Recipe Directions for Festive Cauliflower Casserole

  1. In large saucepan bring 1 inch of water and the cauliflower to a boli. Reduce heat; cover and simmer 5-10 minutes or until crisp-tender; drain. Place in a greased 8" square baking dish

  2. Saute bell pepper and mushrooms in butter until tender. Add flour and salt, stir until blended. Gradually add mik=lk, bring to boil, cook and stir for 2 minutes or until thickened. Remove from heat add pimiento; add cheese, stirring until melted, pour over cauliflower.

  3. Cover and bake at 350 for 20 minutes. Uncover and sprinkle with remaining cheese and bake 10 - 15 minutes longer or until cheese melts
