This recipe comes from Sally Deweese at TOPS. The recipe calls this a salad, but it is excellent on tortilla chips, too! A serving size is about 2/3 cup

Recipe Ingredients for Festive Black Bean Salad

2 tablespoons cider vinegar
2 tablespoons pineapple juice
4 teaspoons olive oil
2 cloves garlic, chopped
1 teaspoon ground cumin
1/2 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon ground red pepper
45 oz black beans, rinsed and drained
15 oz corn, drained
1 red bell pepper, chopped
1/2 red onion, chopped
1/2 cup fresh cilantro, chopped

Recipe Directions for Festive Black Bean Salad

  1. Mix the dressing (first eight ingredients) in a bowl.

  2. In a large bowl, combine the beans, corn, pepper, onions and cilantro.

  3. Whisk the dressing and add to the salad. Toss to coat. Cover and chill for at least one hour.
