Recipe Ingredients for Festive Black Bean Chili (adapted)

2 cups chopped onions
2 cloves garlic
1/2 cup water
1 tablespoon ground cumin
1 tablespoon ground coriander
1 cup salsa
2 bell peppers, chopped
1 1/2 cups cooked black beans
1 1/2 cups cooked kidney beans
28 oz. Tomatoes Diced Fire Roasted
2 cups frozen corn kernels
1/4 cup chopped fresh cilantro

Recipe Directions for Festive Black Bean Chili (adapted)

  1. In a covered soup pot, cook the onions and garlic in the water on high

  2. heat, stirring frequently, for about 5 minutes. Add the cumin and

  3. coriander and stir on high heat for a minute. Stir in the salsa and bell

  4. peppers, lower the heat, cover, and simmer for about 5 minutes, stirring

  5. occasionally. Add the black beans and tomatoes; simmer for 10 minutes.

  6. Add the corn and continue to cook for 10 minutes. Add salt and Tabasco to

  7. taste. Stir in the cilantro, if desired
