Recipe Ingredients for Fennel and Saffron-Stuffed Sweet Potatoes

4 Sweet Potato
2 bulbs fennel, washed and roughly chopped
2 tbsp tofutti sour cream
1/8 tsp saffron
1/2 teaspoon cumin powder
2 tbsp Light Buttery Spread with Flax Oil
1 tbsp olive oil

Recipe Directions for Fennel and Saffron-Stuffed Sweet Potatoes

  1. Preparation:

  2. Clean and dice fennel

  3. Clean and dice mushrooms

  4. Preheat oven to 375 degrees F.

  5. Place sweet potatoes on sheet tray and bake for 1 hour or until soft. Remove from oven and let stand until cool enough to handle.

  6. Split potatoes and remove the flesh to a medium sized bowl, reserving skins.

  7. Add the fennel pieces to a food processor. Pulse until it these are very small pieces, for a few seconds. Place these fennel mini pieces in a large cooking pot. Add the soy sour cream, saffron & cumin powder. Stir well until it all is combined beautifully. Heat up on medium. Let it simmer until it is all cooked through, about 10 to 15 minutes. Stir from time to time to prevent burning. Fold in reserved sweet potato flesh and Smart Balance.

  8. Add the filling back to the potato skins and place on a half sheet tray. Bake for 15 minutes or until golden brown.
