I just made this salad up and it was tasty. Would also be good with other nuts and seeds, maybe pumpkin seeds, almonds or walnuts.

Recipe Ingredients for Fennel orange salad

117 grams Fennel, Bulb
1/2 head, medium (6" dia) Lettuce, Iceberg
2 cups Mixed Baby Greens
2 fruit (2-5/8" dia) Oranges
1 tbsp Olive Oil
2 tbsp Honey, Strained Or Extracted
1 tbsp Vinegar, Cider
6 grams Chia Seeds, Dried
1/2 cup slices Beets

Recipe Directions for Fennel orange salad

Mix the dressing ingredients separately. Use a peeler to slice the fennel up really finely. Chop the beet into small wedges/chunks (use baby beetroot), chop the iceberg lettuce and tear up the other leaves. Use a knife to take the skin off the oranges (including the segment skin), then cut out segments to drop in salad. Squeeze the juice out of the remainder of the orange onto salad. Then pour the dressing over. Voila!
