Cut fennel bulbs into thin matchsticks and toss with carrots in a bowl. Whisk together lemon juice, vinegar, oil, olives and salt to taste. Chill, covered at least 30 minutes. Just before serving, stir in sundried tomatoes and parsley.

2 bulbs fennel (medium)
5 carrots, coarsely grated
1 tablespoon fresh lemon juice
1 tablespoon balsamic vinegar
3 tablespoons extra-virgin olive oil
1/4 cup green olives, finely chopped
12 grams sundried tomatoes , very thinly sliced
2 tablespoons parsley, chopped
