Fennel & Cabbage slaw with smooth dressing

Recipe Ingredients for Fennel Cabbage Slaw

1 fennel bulb, core removed, cut into quarters, and sliced very thinly, fronds reserved
1 cup thinly sliced purple cabbage
2 scallions, chopped
2 strips bacon, cooked crisp and chopped
2 T mayonnaise
2 T plain yogurt
3 tablespoons red wine vinegar
1 t Splenda

Recipe Directions for Fennel Cabbage Slaw

  1. Toss the fennel (save fronds for dressing), cabbage, scallions, and bacon together in a medium bowl.

  2. Whisk the mayonnaise, vinegar, fennel fronds, sweetener, and salt and pepper, to taste, in a small bowl.

  3. Add the dressing to the slaw and toss to coat. Refrigerate until ready to serve.
