Low-fat vegan risotto. Makes a little more than (4) 1 cup servings.

Recipe Ingredients for Fennel Brown Rice Risotto

1 fennel bulb, diced
1 med. onion, diced
1 zucchini, peeled and diced
4 celery stalks, diced
2 c. stock
1 T. olive oil
1 c. water
1 salt and pepper to taste
1/2 c. brown rice

Recipe Directions for Fennel Brown Rice Risotto

For the fennel discard the stems and leaves. Heat olive oil in a large pan over med. heat. Add the fennel, onion, & celery. Sweat until translucent. Add rice and stir. Add zucchini and stir. Add 1 c. of stock and turn down to medium low. When stock is absorbed add more. Then add water as needed. Cooking the rice should take around 45 minutes. Season with salt and pepper.
