Oven-fried felafels with a simple cucumber sauce to accompany.

Recipe Ingredients for Felafels with Cucumber-Yogurt Sauce

1 tbsp olive oil
15 oz chickpeas
1 cup diced onion
3 cloves garlic
1/4 cup fresh parsley
1/4 cup fresh cilantro
1 tbsp lemon zest
1/2 tsp kosher salt
1/2 tsp cumin
1/2 tsp red pepper flake
1/2 tsp baking powder
1/3 cup flour
1 egg
1/2 cup plain nonfat yogurt
1/4 cup cucumbers (seeded, minced)
2 tsp lemon juice
1 tsp garlic
1 tsp salt
1 tsp cayenne pepper

Recipe Directions for Felafels with Cucumber-Yogurt Sauce

  1. Coat a 9x13 metal baking pan with nonstick spray and 1 tablespoon of the olive oil. Place into oven and preheat to 375 degrees.

  2. Pulse chickpeas, onion, 3 garlic cloves, cilantro, parsley, lemon zest, salt, cumin, red pepper flakes, and baking powder in a food processor until minced but not a paste. Transfer to a bowl and stir in the flour and the egg.

  3. Drop felafels mixture in golf ball sized lumps onto the hot baking sheet and bake for 20 minutes.

  4. After 20 minutes, brush the tops with olive oil and flip and bake until golden brown on both sides, about 15-20 minutes.

  5. Combine yogurt, cucumber, lemon juice, and garlic in a bowl. Add salt and cayenne pepper to taste. Chill until ready to serve.
