Feijoa Loaf Recipe

Feijoas are also called pineapple guavas. You can substitute ripe bananas

Recipe Ingredients for Feijoa Loaf

2 cups feijoas
1 cup boiling water
1/2 cup sugar
2 cups wholewheat flour
1 teaspoon baking powder
50 g butter
1 teaspoon baking soda
1 egg, beaten
1/2 c walnuts

Recipe Directions for Feijoa Loaf

  1. Preheat oven to 180 C.

  2. Place feijoas, sugar, butter and water in a saucepan and bring to the boil, cook gently for 5 minutes and then remove from heat and allow to cool.

  3. Carefully stir in the dry ingredients, chopped walnuts and beaten egg.

  4. Mix until dry ingredents are just moistened.

  5. Bake in lined loaf pan for 50 minutes until loaf feels firm and a skewer inserted comes out clean.

  6. This also bakes well in a large casserole dish
