Recipe Ingredients for Feddiechick's Swedish Meatball Recipe

1 1/2 cups breadcrumbs
1/2 cups skim milk
1 lb lean ground beef
2 eggs, beaten
1 medium onion, diced
1 tsp garlic powder
1 tsp salt
1/4 tsp pepper
2 tsp nutmeg
1 tsp mustard
2 cups low sodium beef broth
2 tbsp gravy, beef, canned
2 tsp tomato sauce
1 1/4 cups fat free sour cream
1 clove garlic, minced

Recipe Directions for Feddiechick's Swedish Meatball Recipe

  1. Soak the breadcrumbs in the milk; mix with the ground beef.

  2. Add the eggs, onion, garlic powder, salt, pepper, nutmeg, and mustard; mix thoroughly.

  3. Shape into 20 meatballs.

  4. Fry in butter until browned on all sides. (for a lower fat alternative, bake the meatballs in the oven for about 20 minutes at 350 F instead of frying.)

  5. Mix the beef borth, beef gravy, tomato sauce, sour cream, garlic, (and a dash each of Worcestershire sauce and soy sauce, if desired) int a crockpot or a 2-quart saucepan.

  6. Simmer until the sauce thickens.

  7. If necessary, add a little flour or cornstarch to give the sauce enough body to stock to the meatballs. (I ate this with rice, and that starch was enough to make it stick great.)

  8. Add cooked meatballs.

  9. variation: Vegetarian friends tell me that tofu can be ground and used in the same way as ground beef. In this form, the meatballs are aligned with moon magic, luck, and psychic insight.

  10. Magical associations: the meatballs can be shaped to suit any magical goal, but in round form they can be symbolic of cycles, movement, fertility, and masculine or solar energy. (the masculine meat balls [that sounds dirty. hah] combined with the milk associations of the feminine also make this a good dish for balance of male and female energies)
