Makes 2 delicious white baguettes. I've used this bread as sandwich bread and it was awesome! 187 calories for 1/6th of a loaf. While not as low cal as my light bread, I'm so glad to be getting rid of all of the fake junk chemicals that were in it.

Recipe Ingredients for Feather Bread

4 cups flour
2 packages yeast
1 tablespoon sugar
1 tablespoon salt
1/3 cup butter
1/2 (15 grams) egg white

Recipe Directions for Feather Bread

  1. In a mixing bowl, place 3 cups flour and the yeast, sugar, and salt. Stir to blend. Pour in the hot water. Stir with a heavy spoon or a mixer flat beater for 2 minutes, until the batterlike dough is smooth. Cut the butter into 2 or 3 pieces and drop into the bowl. Stir until the butter has been absorbed into the mixture.

  2. Add the balance of the flour, 1/4 cup at a time, stirring vigoroursly after ea h addition. When the dough is a shaggy mass and can be lifted from the bowl, place on a floured work surface. Or, if in the mixer, insert the dough hook.

  3. Knead until the dough is smooth and elastic, about 8 minutes by hand or with the dough hook. Add sprinkles of flour if the dough is sticky. The dough should clean the bowl when sufficient flour has been added. The dough will be soft and warm.

  4. FIRST RISING: Place the dough in a greased bowl, cover with plastic wrap, and leave at room temperature until it doubles in volume. (about 1 hour)

  5. SHAPING: Knead for 30 seconds to flatten the dough and press out the bubbles. Divide into 2 pieces. Under the palms of your hands, roll each into an 18 or 20" baguette. Place on the baking sheet with the seams under.

  6. SECOND RISING: Cover the loaves with wax paper and elave at room temperature until the loaves double in volume. (about 45 minutes)

  7. PREHEAT: Preheat the oven to 425 degrees for 20 min

  8. BAKING: Make a 1/2" deep slash down the top of the loaf with a razor blade or sharp knife. In the oven, the crust will open along this line. Brush the loaves with the egg white mixture and bake until they are light and shiny brown (about 25 minutes) Turn the loaf over and tap the bottom with a forefinger. A hard hollow sound means the bread is baked. (If using a convection oven, reduce heat by 50 degrees)

  9. FINAL STEP: Place on a metal rack to cool. Best eaten fresh! BUT, can be put in deep freeze with decent results.
