Macaroni and cheese with lots of vegetables

Recipe Ingredients for Faythe's Veggie Packed Mac & Cheese

1 pound acorn squash
1 cup chicken stock
1 1/2 cups 1% milk
1 dash nutmeg
1 dash cayenne pepper
1 teaspoon Mustard Powder
1/2 teaspoon salt
8 ounces whole wheat elbow macaroni
4 ounces Extra Sharp Cheddar Cheese
4 tablespoons parmesan cheese
1/2 cup Nonfat Greek Strained Yogurt
4 cups cauliflower
1 1/2 cups broccoli
2 cloves garlic
4 tablespoons chives

Recipe Directions for Faythe's Veggie Packed Mac & Cheese

  1. Peel squash and cut up into cubes. Place in a large saucepan or dutch oven with milk and chicken stock and bring to a boil. Lower heat to medium and simmer 10 minutes or until fork tender. Remove from heat, add minced garlic and spices, then mash or blend until smooth.

  2. Grate cheese and set aside.

  3. Preheat oven to 375 degrees

  4. Saute cauliflower and broccoli with a bit of salt and butter until tender. Set aside. At same time, bring water to a boil, salt the water and cook the pasta until al dente. Drain, then transfer pasta to the same saucepan or dutch oven with the blended squash. Fold in the cauliflower and broccoli and the cheese, mixing well.

  5. Place in a 9x13 baking dish and bake for 30 minutes.

  6. You could also add a breadcrumb topping or cover with more cheese if you felt like it.
