Recipe Ingredients for Favorite White Chili Recipe

1 lb chicken, cut up into small chunks
1 cup chopped onion
15 ounces chicken broth
2 cloves of garlic, chopped finely
2 tsp Cumin seed
1/2 tsp dried oregano leaves
45 ounces cannellini beans, drained and rinsed
1 chopped red bell pepper
4 1/2 ounces green chilies

Recipe Directions for Favorite White Chili Recipe

  1. In a 4 or 6 quart crockery cooker combine the chicken, onions, chicken broth, garlic, cumin and oregano.

  2. Let cook awhile on low (approx. 3-5 hours, depending on your schedule) Add drained beans.

  3. Now here is the important part if you don't want mushy chili.. Add the bell peppers and chilies no earlier than the last hour or hour and a half before serving.

  4. Top each serving with shredded Monterey jack cheese and or broken tortilla chips if desired.

  5. Tips:

  6. Marinate chicken for 4 hours with Lowry's 30 minute Tequila-Lime marinade

  7. May want to increase seasoning - try it first
