Favorite Pot Roast Recipe

One of my favorite winter meals. Chuck is the best cut for pot roast, but you could also use brisket or another stewing cut.

Recipe Ingredients for Favorite pot roast

4 lbs. chuck roast
2 medium yellow onions
1 lb. cremini mushrooms
12 carrots
1/2 cup red wine
1/2 cup beef broth
2 tbsp. vegetable oil
1 tsp. salt
1 tsp. ground pepper

Recipe Directions for Favorite pot roast

  1. Slice the onions and mushrooms. Peel the carrots and cut into two or three inch lengths.

  2. Rinse the meat and pat it dry. Sprinkle salt and pepper all over it.

  3. Heat the oil in a dutch oven or other large, heavy bottomed pot.

  4. Brown the meat on all sides--at least three minutes per side.

  5. Remove the browned meat to a plate and set aside.

  6. Place the onions into the pot you used to brown the meat. Saute about five minutes, until they have begun to soften. Add the mushrooms to the pot and saute to soften, about five minutes. Be sure to scrape any browned bits of meat off the bottom of the pot.

  7. Return the browned meat to the pot, and also add any juices that have drained off the meat to the pot.

  8. Add the carrots.

  9. Add the wine and the beef broth and bring all to a boil.

  10. Heat the oven to 400 degrees and put the pot (covered) into the oven.

  11. Cook for at least two hours, possibly three, until the meat is thoroughly cooked and falling apart.
