A wonderful dish for the entire Fall or even for Thanksgiving.

Recipe Ingredients for Favorite Fall Quinoa

2 cups Quinoa
4 cups Low Sodium Vegetable Broth
4 cups Butternut Squash
2 cups Onions
2 cups Cranberries
3 T. Apple Cider Vinegar

Recipe Directions for Favorite Fall Quinoa

  1. Cook Quinoa in Vegetable Broth according to instructions on package.

  2. In a rectangular pan sprayed with cooking spray, place squash, onions and cranberries. Spray with more cooking spray and place in a 425 degree oven for 20 minutes. Remove allow to cool slightly and then toss in Apple Cider vinegar. Add vegetables to quinoa and serve.
