Makes 6 servings



Like egg drop soup, but without corn starch and with added veggies. From my favorite Chinese place.

Recipe Ingredients for Favorite Chinese Tomato Egg Soup

6 cups (1 small head) napa cabbage
5 cups (1 container) Chicken Stock
3 tomatoes, vine-ripened
4 eggs, beaten
1 tbsp sesame oil
8 tbsp shallots
1/4 cup ginger root
2 tbsp canola oil

Recipe Directions for Favorite Chinese Tomato Egg Soup

  1. saute chopped cabbage, shallots and ginger in canola oil until cabbage is wilted

  2. add stock, sesame oil and tomatoes, bring to a boil

  3. once boiling, add eggs slowly to create ribbons

  4. cook 1-2 minutes longer, serve.
