Recipe Ingredients for Fava (Broadbean) Dip

4 cups fava beans, shelled
1/2 cup olive oil
3 tablespoons lemon juice
2 cloves garlic
1 teaspoon salt
1/4 teaspoon black pepper

Recipe Directions for Fava (Broadbean) Dip

  1. Blanch (boil) shelled fava beans for 2-3 minutes. Put larger beans into the boiling water first, then add smaller beans when water returns to a boil.

  2. Drain the beans and 'shock' by dropping them into a cold water bath. Peel the thick outer membrane from large beans. On small fava beans, this skin is thin and doesn't have to be removed.

  3. Put half of the fava beans into a food processor or blender. Add the olive oil and lemon juice, and garlic. Blend until smooth.

  4. Add the remaining fava beans. If using a blender, they should be slowly added as the blender is running. Stop the blender and stir often, then turn the blender back on and add more favas. If you're using a food processor, they can be added in all at once.

  5. After all the fava beans have been incorporated, blend one or two minutes. (Stop the blender and stir once or twice during this time.)

  6. Add salt and pepper to taste.

  7. Chill at least four hours to meld flavors.

  8. Serve with sourdough bread or pita wedges. Could also be a terrific sandwich spread, salad dressing, or pesto alternative. Garnish a bowlful with cilantro or parsley, and serve with a platter of veggies.
